活性炭在酿酒中起到的作用:
一.去除低度白酒中的沉淀物。
 在低度白酒的生产中,由于酒的降度,白酒中的高级脂肪酸乙酯,高级脂肪醇的溶解度降低,使酒体呈现乳状浑浊。去除低度酒中的沉淀,保持原酒的风味,低温不复混浊是生产低度白酒的关键,生产低度白酒的方法很多,如冷冻法、淀粉法、树脂法、抗凝剂法、磷酸钙法、结晶纤维素法、酒类专用炭法等,综合对比以酒类专用炭法最佳浓香型低度白酒中己酸乙酯的损失是影响酒风味的关键指标,选用不同的活性炭,对己酸乙酯的吸跗也不同。据测定,己酸乙酯分子直径14a。若选用孔径为14~2oa的活性炭来去际低度白酒中的沉淀物,己酸乙酯就会进微孔而被吸附,使低度白酒风味受损。只有选用孔径大于2.0的酒类专用炭,其微孔成为己酸乙酯的通道,炭不会吸附己酸乙酯。这就是酒类专用炭制备低度白酒时,能吸附沉淀物,保持低度白酒低温不失光,还能很好地保持浓香型酒原酒风味的原因所在。
二.去除酒中的异杂味和苦味
 酒类专用活性炭是一种因在不同生产过程中制成含孔径大小不同的专用吸附剂,它在酒中主要吸附产生异味、异臭的杂醇油、糠醛、二甲基硫等有机物及醛类物质;并通过选用活性炭孔径和处理时间,用量的不同吸附其中的大分子脂肪酸乙酯,加速水和乙醇分子的缔合,从而预防酒在低温下析出酸类乙酯,加速陈化,改善酒质。酒类专用活性炭用于酒类除浊、催陈,浅度去除异杂异味,防止高度酒低温下复浊,去除白酒中的各种色素,去除酒类中的苦味物质,改善口感。
三.加速酒的陈化
 酒类专用炭加速白酒的老熟、陈化,新酒一般口感暴烈、冲辣、糠杂昧重,有时还有一种新酒的异味。要生产优质酒,都要在生产工艺上规定有一定的贮存期,少则三个月、半年,多则几年或几年以上,称为酒的老熟、陈化。老熟、陈化过程是一个综合的化学~物理过程。有氧化、酯化、乙酰化等化学变化.也有分子结构重排等物理化学作用。自然老熟、陈化是一个非常缓慢的过程,浓香型白酒最少存放半年;而酱香型白酒要贮存陈化三年之久。这样长的周期,酒库占用面积之大.积压资金之多,相应地降低了酒厂的经济效益。为了克服这一难题,加速酒的陈化,市场上出现了各种快速老熟机,陈化机.射线,x射线,超声渡等,但效果都不好。用酒类专用炭处理新酒(用炭量0.2%一0.4%)只需1—3天的时间,处理后的新酒口感柔和、少冲辣、无新酒异味,其原因就是酒类专用炭是一种氧化炭,有很大的比表面积.其表面还有较多的含氧功能团和各种微量金属及金属离子,少量的酒类专用炭在酒中,大的比表面积和含氧功能团与酒充分接触,酒类专用炭吸附了一些带异味的物质(硫化物、高级脂肪酸等);酒类专用炭加速了乙醇的氧化,使其成为乙醛。进一步氧化成醋酸,醋酸并催化醇和醋酸生成乙酸乙酯和高级脂肪酸酯,以及其他缩合反应:可见,加入酒类专用炭后,在短期内完成了新酒自然老熟中长期才能完成的氧化、缩台、去杂味等作用。
